Most sushi lovers are familiar with uni, a rich creamy substance that is full of flavor. Uni comes from large red sea urchins that are caught off the coast of California.
But as ocean temperatures increase and acidify due to climate change, red sea urchins are under threat. But luckily, scientists have discovered a possible replacement source of uni.
