When you look at a forest, the variety of trees you see above ground is only part of the story. Beneath the soil, vast networks of fungi influence which trees thrive, which coexist, and how forests respond to the challenges of climate and geography.



A new study led by researchers from <a href="https://www.purdue.edu/">Purdue University</a> and <a href="https://english.pku.edu.cn/">Peking University</a> has revealed how these underground fungal allies shape tree diversity across the globe. Their influence varies depending on latitude, moisture, and environmental stress.



<h2 class="wp-block-heading" id="h-fungi-hidden-beneath-forests">Fungi hidden beneath forests</h2>



Jingjing Liang, an associate professor of quantitative forest ecology at Purdue, co-led the study with Zhiheng Wang from Peking University.



“What we can see above ground is governed to a large extent by what is happening belowground,” said Liang.



The experts analyzed data from over 442,000 forest plots worldwide and focused on two main groups of <a href="https://www.earth.com/news/plants-distribute-enormous-amounts-of-co2-to-mycorrhizal-fungi/">mycorrhizal fungi</a>: ectomycorrhizal and arbuscular mycorrhizal fungi. 



Both form partnerships with tree roots, trading nutrients for carbohydrates, but they do so in different ways that profoundly influence <a href="https://www.earth.com/news/forests-rich-tree-diversity-adapt-better-changing-climate/">forest diversity</a>.



“The loss in tree species diversity may damage the ecosystem services provided by forests," Wang said. "Understanding the mechanisms driving the maintenance of tree species forest diversity is fundamental for the conservation of tree species diversity.” 



<h2 class="wp-block-heading" id="h-solving-a-forest-diversity-puzzle">Solving a forest diversity puzzle</h2>



For years, scientists have debated how fungal partnerships impact tree species diversity, proposing three competing hypotheses. This comprehensive global study found that all three are valid, depending on environmental context.



“Our findings reconcile inconsistencies regarding how mycorrhizal symbiosis influences tree species diversity,” Wang said.



Using precise forest inventory data collected worldwide, the team applied advanced statistical methods to filter noise from complex ecological data, revealing hidden patterns.



“With this data, we were able to very accurately capture this relationship between different types of mycorrhizal fungi and forest tree species diversity,” Liang explained.



<h2 class="wp-block-heading" id="h-fungal-effects-shift-with-climate">Fungal effects shift with climate</h2>



<a href="https://umich.edu/">University of Michigan</a> ecologist Peter Reich, a senior co-author, highlighted the value of the study’s comprehensive approach. 



“This insight would have been impossible to detect without the comprehensiveness of this dataset, which allows us to test across large gradients of <a href="https://www.earth.com/news/climate-change-is-altering-the-temperature-in-66-of-tropical-forests/">temperature</a>, moisture, and latitude,” he said.



Reich explained that ectomycorrhizal fungi often dominate in cold, nutrient-poor regions that naturally have fewer tree species. Without a broad dataset, this dominance could obscure the fungi’s more nuanced effects.



“But by being able to tease apart temperature and moisture, we can see that when conditions are generally good," he said. "The more abundant the ectomycorrhizal are, the more they do to reduce tree richness.”



The process is complex. While dominant tree species naturally suppress less competitive species, root <a href="https://www.earth.com/news/plant-pandemic-looms-as-pathogens-move-from-wild-plants-to-crops/">pathogens</a> usually check the dominance, allowing diversity. 



Ectomycorrhizal fungi suppress these pathogens, enabling dominant trees to thrive unchecked, which can reduce species diversity.



<h2 class="wp-block-heading" id="h-harder-climates-stronger-alliances">Harder climates, stronger alliances</h2>



The study also found that under stressful conditions - such as low moisture or cold climates - the combination of both fungal types fosters greater diversity.



In these environments, resource-sharing partnerships help more tree species survive, while pathogen suppression plays a smaller role.



“Both ways of influencing tree diversity are real, but their relative balance and magnitude of impacts vary with environmental context,” Reich said.



<h2 class="wp-block-heading" id="h-healing-forests-from-below">Healing forests from below</h2>



Liang emphasized that understanding the hidden fungal networks in forests is akin to treating a patient holistically. 



“We should not just look at the surface symptoms. We should look deep down, literally to the roots of the problems, and that is belowground mutualism,” he said.



This work, supported by the <a href="https://www.gfbinitiative.org/">Global Forest Biodiversity Initiative</a> and its Science-i platform, demonstrates how global collaborations can untangle complex ecological questions.

The findings open pathways for further research: How do these underground alliances affect <a href="https://www.earth.com/news/mixed-forests-with-many-tree-species-are-more-effective-at-carbon-storage/">carbon storage</a> in forests? Can fostering specific fungal partnerships enhance forest resilience in a changing climate?



&nbsp;“And what can we do to enhance the health of our forest ecosystem by not just seeing what is on the surface, but what is belowground?” Liang asked.



By revealing the profound influence of underground fungal networks on forest diversity, this research underscores that the key to healthier forests - and perhaps a healthier planet - may lie hidden beneath our feet.

A recent study has investigated the mechanisms through which apples get their particular shapes (mostly spherical, with a cusp at the top where the stems grow). Using observations, lab experiments, theories, and computations, a team of mathematicians and physicists led by the <a href="https://www.seas.harvard.edu/">Harvard John A. Paulson School of Engineering and Applied Sciences</a> (SEAS) is shedding new light on the growth and form of apple cusps.



The research team collected apples at various <a href="https://www.earth.com/news/plants-and-animals-rely-on-the-same-chemicals-for-growth/">growth</a> stages from an orchard at <a href="https://www.pet.cam.ac.uk/">Peterhouse College</a> and mapped the growth of their cusp over time. Next, they used numerical simulations to understand how differential growth between the fruit cortex and the core drives the formation of the cusp. Finally, they corroborated these computations with experiments mimicking the growth of apples using gel that swelled over time.



“Being able to control and replay morphogenesis of singular cusps in the laboratory with simple material toolkits was particularly exciting,” said&nbsp;co-author Aditi Chakrabarti, a postdoctoral fellow at SEAS. “Varying the geometry and composition of the gel mimics showed how multiple cusps form, as seen in some apples and other drupes, such as peaches, apricots, cherries and plums.”



Scientists discovered that different rates of growth between the bulk of the apples and their stalk regions resulted in the dimple-like cusp. In order to explain the evolution of cusps’ shapes, they turned to a mathematical theory known as <a href="https://www.sciencedirect.com/topics/mathematics/singularity-theory">singularity theory</a>, which is used to describe a large variety of different phenomena, ranging from mundane ones such as the light patterns forming at the bottom of a swimming pool to more esoteric ones, such as black holes.



“Biological shapes are often organized by the presence of structures that serve as focal points,” explained study senior author Lakshminarayanan Mahadevan, a professor of Applied Mathematics, Organismic and Evolutionary Biology, and Physics at SEAS. “These focal points can sometimes take the form of singularities where deformations are localized. A ubiquitous example is seen in the cusp of an apple, the inward dimple where the stalk meets the fruit.”



“Morphogenesis, literally the origin of shape, is one of the grand questions in biology. The shape of the humble apple has allowed us to probe some physical aspects of a biological singularity. Of course, we now need to understand the molecular and cellular mechanisms behind the formation of the cusp, as we move slowly towards a broader theory of biological shape,” he concluded.

In the last few decades, scientists and environmentalists have constantly raised their concerns on the increasing impact of climate change on <a href="https://www.earth.com/news/coastal-ecosystems-are-important-carbon-sinks/">ecosystems</a>. One such concern is the extinction of numerous species of flora and fauna.&nbsp;



"With climate change and natural area loss pushing more and more species to the brink, now is the time to lift up proactive, collaborative, and innovative efforts to save America's wildlife," said Deb Haaland, U.S. Interior Secretary.



A recent proposal by the <a href="https://www.fws.gov/">U.S. Fish and Wildlife Service</a> intends to declare 23 federally protected species as extinct. The list includes a fruit bat, 11 birds, eight freshwater mussels, two types of fish, and a flowering plant in the mint family.&nbsp;



This would be the largest group of animals and plants to be formally declared extinct under America's main wildlife protection legislation, the Endangered Species Act (ESA) since it was passed in 1973.



Previously, only 11 species listed under the act have been classified as extinct over the years, said Brian Hires, a representative for the Interior Department agency&nbsp;



It is important to note that the Endangered Species Act has achieved a certain level of success as well. According to Hires, "54 species including the American peregrine falcon and bald eagle were removed from protected status due to their recovery, and another 56 species have been 'down-listed' from endangered to threatened."&nbsp;



Scientists have cautioned that the list of extinct species may lengthen in the near future as more species are predicted to become extinct due to human-caused climate change and habitat destruction. Currently, a total of more than 1,600 domestic animal and plant species are listed under the Endangered Species Act.



According to the US Wildlife Service, since 1970, avian populations as a whole have diminished by nearly 3 billion birds in the North American region due to rapid environmental changes linked to human activities.



America's largest woodpecker, the ivory-billed woodpecker most commonly known as the "Lord God Bird," was last sighted in 1944 and will now be officially declared extinct. Experts state that the destruction of its habitat due to logging of old-growth forests in the southern parts of the United States resulted in its extinction.



Bachman's warbler, one of America's rarest songbirds, is also included on the list. Since 1962, it has not been sighted in the wild in the United States. The last reported sighting of the migratory bird occurred in Cuba in 1981.



In 1967, the ivory-billed woodpecker and the warbler were first designated as endangered under the Endangered Species Preservation Act, which served as a forerunner to the ESA.



Eleven of the twenty-three species recommended for classification as extinct are indigenous to Hawaii and the Pacific Islands. Experts believe that heightened risks presented by their very limited geographic range may have caused their extinction.



The wildlife service will accept public comments on the proposal and a final decision will be published on Dec. 29, 2021.&nbsp;

The Bigleaf Maple is a tree native to the wet <a href="https://www.earth.com/news/african-mountain-forests-store-huge-amounts-of-carbon/">forests</a> of the Pacific Northwest, famous for hosting leaves that can grow to an unbelievable 1.5 feet in width. However, new research from the <a href="https://www.washington.edu/">University of Washington</a> predicts a bleak future for the Bigleaf Maple.



Hikers, residents, and scientists have observed an increasing number of stressed and dying Bigleaf Maples since 2011. The new study has concluded that the root cause of this decline is the increasingly hot and dry summers in Washington, ultimately weakening the tree immune systems.



“These trees can tolerate a lot, but once you start throwing in other factors, particularly severe summer drought as in recent years, it stresses the trees and can lead to their death,” explained study co-author Patrick Tobin, associate professor in the UW School of Environmental and Forest Sciences.



While climate change is an obvious culprit for the change in Washington’s climate, the study found that human development is another key contributor. The research showed that the Bigleaf Maples are significantly less likely to survive in hot urban areas, near roads, and other man-made structures.



“Managing, protecting, and utilizing our urban and wild ecosystems in the face of climate change and human population growth is and will continue to be one of the major challenges facing us,” stated lead author Jacob Betzen, a biological technician with the U.S. Forest Service.



The researchers revisited 36 roadside and 59 pastoral sites of Bigleaf Maples, collecting soil, leaves, stems, and tree cores from locations that had previously been sampled in 2014 and 2015. Tree cores allow scientists to analyze the age, weather history, and growth rate of trees without cutting them down, a process that showed that over a quarter of the 95 trees were declining rapidly.



“These results show that summer heat and drought impact the health of iconic tree species of Washington, like bigleaf maple, even in Western Washington, a region known for abundant precipitation. Health impacts to our forests and tree species are likely to continue as we have increased periods of drought each year,” said co-author Amy Ramsey, an environmental planner and forest pathologist with Washington DNR.



Whilst it is likely too late to prevent the already rising heat and dryness of summers in Washington, Betzen and his co-researchers hope that the findings will encourage conservation efforts. Preventing the urbanization of suitable forest habitats, using seed stock better, and treating Bigleaf Maples already present in urban areas all present themselves as potentially effective conservation methods.

Despite the fact that photosynthesis has been taught in schools for centuries, experts still do not have a precise estimate of when the process first arose on <a href="https://www.earth.com/news/melting-polar-ice-is-warping-earths-crust/">Earth</a>. In a new study, scientists at the <a href="https://www.mit.edu/">Massachusetts Institute of Technology</a> have pinpointed exactly when cyanobacteria evolved oxygenic photosynthesis.



The evolution of oxygenic photosynthesis allowed cyanobacteria to turn light and water into energy, resulting in the accumulation of oxygen in the atmosphere and oceans and kickstarting the diversification of life on Earth's habitat.



The MIT scientists, based in the Department of Earth, Atmospheric and Planetary Sciences, developed a new genetic analysis technique that traced the origin of cyanobacteria back to 2.9 billion years ago.



This evolutionary process began when ancestors of cyanobacteria branched off from other bacteria around 3.4 million years ago, with photosynthesis as we know it arising within the next 500,000 years.



“In evolution, things always start small,” explained study lead author Greg Fournier. “Even though there’s evidence for early oxygenic photosynthesis - which is the single most important and really amazing evolutionary innovation on Earth - it still took hundreds of millions of years for it to take off.”



Fournier explained that variation in results between genetic analysis techniques can have great implications on our perception of evolutionary narratives. The new technique suggests that photosynthesis developed over 500,000 years after the rise of cyanobacteria, while past techniques suggested that the roots appeared far later, with rapid development of photosynthesis following shortly after.



“In order for us to understand the history of habitability on Earth, it’s important for us to distinguish between these hypotheses,” Fournier explained.



The new genetic analysis technique combines both molecular clock dating and horizontal gene transfer. Horizontal gene transfer essentially concerns the tracking of genes developing from other species, as opposed to traditional ‘vertical’ inheritance.



The method allows researchers to pinpoint timeframes that genes originated from more precisely, helping to determine the relative ages between bacterial groups. This can then be incorporated with traditional molecular clock prediction models.



Essentially, the hybrid analysis technique was used to locate horizontal genetic transfer across cyanobacteria, identifying 34 instances that matched one out of six existing molecular clock models.



Using this model to estimate the age of the origins of cyanobacteria, the team found that the "crown" group of cyanobacteria branched off from other bacteria around 3.4 billion years ago. Ultimately, this indicated that photosynthesis had already been happening for half a billion years, tipping the Earth into the GOE and thus life diversification.



“This work shows that molecular clocks incorporating horizontal gene transfers (HGTs) promise to reliably provide the ages of groups across the entire tree of life, even for ancient microbes that have left no fossil record… something that was previously impossible," said Fournier.

Honeybees can be infected by a <a href="https://www.earth.com/news/wildfire-smoke-could-cause-a-surge-in-coronavirus-cases/">virus</a> that makes their wings develop in an abnormal manner and causes them to fly poorly, or even lose their ability to fly altogether. The infection has also been shown to affect the ability of bees to learn and remember, which means that they may lose their way and not return home after a foraging trip. Bees that do not return to the hive at night are likely to die.



Bee colonies have been declining in number globally, and this has serious consequences for the pollination of important food crops. Scientists suggest this decline is due, in part, to the effects of the numerous different pathogens that infect bees.&nbsp;



The results of a recent study, published in the journal&nbsp;<a href="https://www.cell.com/iscience/home">iScience</a>, indicate that a cheap, naturally occurring compound can prevent and even reverse the effects of Deformed Wing Virus (DWV) on infected honeybees.&nbsp;



“Pathogens are definitely a stressor for bees,” said study first author Cheng-Kang Tang at National Taiwan University. “But the beekeepers don’t want to use pesticides because of food safety concerns. So, we set out to find some compounds that can increase the strength of bees.”



The scientists found that DWV suppresses the expression of genes associated with nerve impulse transmission and other processes related to learning and memory in bees. Past research has shown that feeding aged mice with sodium butyrate (NaB), a common compound found in plants and in human intestines, can significantly improve their memories. Furthermore, NaB is known to increase the expression of genes in a range of different animals.&nbsp;



A previous study by the same authors demonstrated that including NaB in the diet of honeybees resulted in a significant increase in the expression of genes involved in immunity as well as in learning and memory. NaB also restored learning ability in bees that had been treated with neonicotinoid, an ingredient in some pesticides. Therefore, the researchers set out to test whether adding NaB to the diet of honeybees would improve their ability to resist the effects of infection with DWV.&nbsp;



A team led by Yueh-Lung Wu at National Taiwan University initially fed bees with NaB-laced sugar water for a week before infecting them with DWV. More than 90 percent of these bees remained alive after five days, while 90 percent of the infected bees that didn’t get NaB died over the same period.



“Our findings show that feeding the insects with NaB before virus exposure can counteract the negative impacts of the pathogen,” said Wu. “We also found previously that NaB can upregulate some immune response genes in bees, and this can help suppress viral replication and improve bees’ chances at survival.”



After finding this result, Wu’s team monitored the numbers of bees leaving and returning to several different beehives on a bee farm. The data, collected over a month, showed that in hives infected with DWV, only half of the foraging bees managed to return to the hive, while more than 80 percent of the bees fed with NaB sugar water were able to return.&nbsp;&nbsp;



“It is a really interesting study because we tested the effect of NaB on bees across different scales, from the genetic level, to behaviors in the lab, then in the field under a natural scenario,” said Wu.&nbsp;



“Sodium butyrate is really cheap. So, if we can prove its benefits, it would be an easy and affordable approach for beekeepers to keep their bees. Honeybees are important pollinators of myriad fruits and vegetables with economic importance worldwide and therefore are crucial for maintaining the balance of the ecosystem”

Balanced diets containing plenty of fruit and vegetables are known to positively contribute to the physical health of <a href="https://www.earth.com/news/boys-who-play-sports-as-young-children-have-better-mental-health/">children</a>. And now, new research from the <a href="https://www.uea.ac.uk/">University of East Anglia</a> has concluded that fruit, vegetables, and nutritious diets also have a beneficial effect on mental well-being.



The study examined the association between fruit and vegetable intakes, breakfast and lunch choices, and mental health of almost 9,000 school children across 50 local primary and secondary schools.



Lead researcher Professor Ailsa Welch explained the importance of the research. "We know that poor mental well-being is a major issue for young people and is likely to have long-term negative consequences. Adolescent mental health problems often persist into adulthood, leading to poorer life outcomes and achievement.”



Mental well-being data was gathered through self-reported dietary choices and age-appropriate surveys that asked students to score their mental well-being based on cheerfulness, relaxation, and interpersonal relationships.



Ultimately, the study concluded that children who exceeded their ‘five a day’ had the highest mental well-being scores. “As a potentially modifiable factor at an individual and societal level, nutrition represents an important public health target for strategies to address childhood mental wellbeing," explained Professor Welch.



The study also provided insight into nutrition trends among school children, showing that over 20 percent of primary students did not eat breakfast, over 10 percent of secondary students did not eat lunch, and approximately 75 percent of students did not eat their recommended five-a-day.



This is significant, as Dr. Richard Hayhoe explains that the types of breakfast and lunch ate by both primary and secondary school pupils were also significantly associated with well-being. For example, children who ate a traditional breakfast experienced better well-being than those who only had a snack or drink, said Dr. Hayhoe.



On the other hand, “secondary school children who drank energy drinks for breakfast had particularly low mental well-being scores, even lower than for those children consuming no breakfast at all.”



Other environmental factors that could negatively impact mental well-being (such as adverse childhood experiences and home situations) were considered within the analysis. However, Dr. Hayhoe concluded that nutrition had as much or more of an impact on wellbeing as factors such as witnessing regular arguing or violence at home.



The research has been published in the journal BMJ Nutrition, Prevention &amp; Health.&nbsp;

<a href="https://www.earth.com/news/edible-plants-could-replace-shots-as-vaccines/">Plants</a> have evolved over millions of years to adapt to their nutritional needs, including through the incredible method of modifying the permeability of their roots through suberin. However, there is a lot that is not yet known about how this adaptive process works.



A study by Marie Barberon, professor at the Department of Botany and Plant Biology at the Faculty of Science of the <a href="https://www.unige.ch/">UNIGE</a>, previously discovered that the substance is a cork-like protective layer that can be produced or degraded to resist environmental stresses.



Scientists were unsure how such adaptive processes are activated. But now, researchers at the University of Geneva (UNIGE) have discovered four molecular factors that are responsible for the genetic activation of suberin. The research may help to engineer plants that are more resistant to drought, flooding, and overexposure to salt.



The new study, which was led by Professor Barberon, investigated regulators within the endodermis of the Arabidopsis thaliana. The endodermis contains a layer of cells which transports the sap that a plant uses to produce suberin.&nbsp;&nbsp;



“We were able to use one of the characteristics of this plant, namely the transparency of its roots, to observe directly in microscopy the presence or absence of suberin after staining and could identify the factors essential for its production," explained study first author Vinay Shukla.



Through this technique, the researchers were able to identify the four key proteins that allow suberin production in the endodermis.&nbsp;



“Using the CRISPR/Cas9 technique, we also generated a quadruple mutant for these proteins that is impaired in suberin production," said Shukla.&nbsp;&nbsp;



These mutated Arabidopsis plants were then grown within different exposure levels of sodium, with some levels being optimal for growth with others being toxically high.&nbsp;



“We observed that plants whose roots are continuously covered with suberin absorb less sodium than those without. On the other hand, the latter are less resistant to toxic concentrations," explained study co-author Marie Barberon.



Discovering the key properties that regulate suberin formation provides an extremely useful toolset for the precise study of the substance and its role in nutrient balance and maintenance within plants.&nbsp;



Ultimately, the researchers hypothesize that the results of this study could present significant agronomical applications. By using suberin and the techniques used throughout the study, scientists will be better equipped for selecting plants with root traits that are biologically more resistant to adverse environmental conditions.

The addition of <a href="https://www.earth.com/news/edible-plants-could-replace-shots-as-vaccines/">plant</a> extracts to traditionally cured processed meats has recently been shown to reduce the levels of N-nitroso compounds (NOCs) in egested fecal matter in humans. This may mean that plant extracts, such as those from Japanese knotweed, could be used to replace the questionable chemical compounds traditionally used in the curing and processing of meats.



Red meat stimulates the production of NOCs in the colon, and this has been linked to increased risk of developing colorectal cancer. In addition, nitrites used in the curing or processing of meat are also a source of NOCs. Nitrites are commonly added to meat during processing to prevent the growth of pathogenic bacteria, to avert rancidity, and to create the characteristic pink color of cured meats such as bacon and ham.&nbsp;&nbsp;



The safety of eating processed meat has been debated for years, with several reports from the World Cancer Research Fund stating that there is convincing evidence that its consumption is associated with cancer risk. The International Agency on Research on Cancer has classified processed meat as carcinogenic to humans (Group 1 carcinogen), based on sufficient evidence in humans that the consumption of processed meat causes colorectal cancer.



In a recent study, researchers from the PHYTOME project developed processed red meat products that included added natural substitutes of plant origin in order to limit the use of nitrite while still retaining microbial safety. The range of sausages and hams had a mixture of plant and fruit extracts added to them, including rosemary, green tea, and resveratrol extracted from Japanese knotweed.



“The ongoing worries about highly processed red meat have often focused on the role of nitrite, and its links with cancer. The PHYTOME project tackled the issue by creating processed red meat products that replace additives with plant-based alternatives," said Gunter Kuhnle, Professor of Nutrition and Food Science at the <a href="http://www.reading.ac.uk/">University of Reading</a>.



The aim of the study was to evaluate the effect of consumption of processed red meat products with reduced levels of nitrite and with normal levels, but with the addition of phytochemicals in both cases. Apparent total nitroso compounds (ATNCs) were measured and the results were compared with the levels of ATNCs in the feces of people who ate minimally processed white meat.&nbsp;



The results, published in the journal&nbsp;<a href="https://doi.org/10.1002/mnfr.202001214">Molecular Nutrition and Food Research</a>, found that the ATNCs in participants’ feces were significantly lower after consumption of both the normal nitrate and reduced nitrate meats that had been treated with phytochemicals. In both cases, levels of nitroso compounds were similar to those found in people who had eaten the white meat.



“Our latest findings show that using natural additives in processed red meat reduces the creation of compounds in the body that are linked to cancer,” explained Professor Kuhnle.&nbsp;



“Surprisingly, the natural additives seemed to have some protective effects even when the red meat still contained nitrite. This suggests that natural additives could be used to reduce some of the potentially harmful effects of nitrite, even in foods where it is not possible to take out nitrite preservatives altogether.”



These results potentially cast a new perspective on the Japanese knotweed, a perennial plant that is commonly seen as an invasive species and a pest in North America and Europe. It contains a form of resveratrol most useful to the human body and is rapidly becoming the preferred source of this phytochemical.

If as a child, your parents forced <a href="https://www.earth.com/news/broccoli-and-cabbage-reduce-the-risk-of-heart-attack/">broccoli</a> on you against your will, you know that Brassica vegetables (including cauliflower, cabbage and brussel sprouts) are often unloved. A new study from the <a href="https://www.acs.org/">American Chemical Society</a> reveals the science behind why some kids are so repulsed by eating these vegetables.



The research shows that as the unwanted vegetable touches the tongue, a chemical reaction occurs. An enzyme that exists within the microbiome of some people’s saliva reacts with the plant, creating a sulfurous odor. Needless to say, this is unpleasant.&nbsp;



While previous research showed that adults have various levels of this enzyme within their mouths, the new study confirms that the same is true for children as well. Looking at the various levels of the enzyme, the scientists analyzed how this affects whether a child likes Brassica vegetables or not.



Using mass spectrometry, the scientists separated the active compounds causing the unpleasant taste reaction from steamed vegetables. Next, parent child pairs were tested for their reaction to the foul smelling compounds. The researchers mixed saliva with powdered cauliflower to see how much of the noxious chemical was produced by the interaction. There was great variability in how much of the smelly chemicals were produced by each saliva interaction.



Interestingly, in children, those whose saliva caused the worst reactions had the strongest dislike for Brassica vegetables. In adults, there was no cause and effect relationship between a dislike for Brassica and overactive saliva enzymes. The researchers also found that there was a lot in common between the saliva microbiome of a child and his or her parent.&nbsp;



The study has real world relevance because in most western countries, vegetable consumption is below daily recommendations. This health faux pas may be partially due to the microbes living in our mouths.&nbsp;&nbsp;



The research is published in the <a href="https://pubs.acs.org/journal/jafcau">Journal of Agricultural and Food Chemistry</a>.

Researchers at the <a href="https://www.rush.edu/">Rush University Medical Center</a> found that the MIND diet, a hybrid of the Mediterranean and DASH (Dietary Approaches to Stop Hypertension) diets, significantly slows <a href="https://www.earth.com/news/colorful-foods-can-prevent-cognitive-decline/">cognitive</a> decline in older adults and improves their cognitive functioning. 



The MIND diet includes at least three servings of whole grains, a green leafy vegetable, and another vegetable of choice per day, washed away with a glass of wine, together with frequent nut snacks. It should also include regular consumption of beans (every two days), poultry and berries (twice per week), and fish (once per week.) A person following the MIND diet should significantly limit items such as butter, sweets, pastries, whole fat cheese, and fried or fast foods.



<a href="https://www.rush.edu/news/new-mind-diet-may-significantly-protect-against-alzheimers-disease">Previous studies</a> have already suggested that following a MIND diet can significantly protect against Alzheimer’s disease and dementia. According to the new research, which is published in the <a href="https://content.iospress.com/articles/journal-of-alzheimers-disease/jad210107">Journal&nbsp;of Alzheimer’s Disease</a>, participants in a longitudinal study who moderately followed the MIND diet had increased cognitive functioning later in life.&nbsp;&nbsp;



“Some people have enough plaques and tangles in their brains to have a postmortem diagnosis of Alzheimer’s disease, but they do not develop clinical dementia in their lifetime,” said study&nbsp;lead author Klodian Dhana, an assistant professor in the&nbsp;<a href="https://www.rushu.rush.edu/research/departmental-research/internal-medicine-research/geriatrics-gerontology-and-palliative-medicine-research">Division of Geriatrics and Palliative Medicine</a> at&nbsp;Rush Medical College.&nbsp;



“Some have the ability to maintain cognitive function despite the accumulation of these pathologies in the brain, and our study suggests that the MIND diet is associated with better cognitive functions independently of brain pathologies related to Alzheimer’s disease.”



Participants from the&nbsp;ongoing <a href="https://www.rushu.rush.edu/research/departmental-research/memory-and-aging-project">Memory and Aging Project</a>, which has begun in 1997, were given a score according to how closely they followed the MIND diet and undertook annual evaluations and cognitive tests. The scientists found that participants with higher MIND diet scores performed significantly better at cognitive tests and showed less signs of cognitive decline as they grew older.&nbsp;



“We found that a higher MIND diet score was associated with better memory and thinking skills independently of Alzheimer's disease pathology and other common age-related brain pathologies. The diet seemed to have a protective capacity and may contribute to cognitive resilience in the elderly,” explained Professor Dhana.



“Diet changes can impact cognitive functioning and risk of dementia, for better or worse. There are fairly simple diet and lifestyle changes a person could make that may help to slow cognitive decline with aging, and contribute to brain health."

A new study published in <a href="https://link.springer.com/article/10.1007%2Fs10902-021-00440-y">The Journal of Happiness Studies</a> has investigated the impact of fruit, vegetables and exercise on individual <a href="https://www.earth.com/news/cuddling-with-dogs-can-improve-your-well-being/">well-being</a>. The experts found that fruit and vegetable consumption, along with physical activity, increase general life satisfaction.



While correlations between healthy lifestyles and well-being have previously been documented and used in public health campaigns advocating the value of healthier diets and exercise, this new study shows that there is also a positive causation between a healthy lifestyle and general wellbeing.&nbsp;



“There has been a bigger shift in recent years for healthier lifestyle choices. To establish that eating more fruit and vegetables and exercising can increase happiness as well as offer health benefits is a major development,” said study co-author Uma Kambhampati&nbsp;from the <a href="http://www.reading.ac.uk/">University of Reading</a>. “This may also prove useful for policy campaigns around environment and sustainability.”



The researchers argued that the capacity of individuals to delay gratification and apply self-control plays a fundamental role in influencing lifestyle decisions. This ability enables individuals to give greater weight to the investment component of their lifestyle, which might not always be pleasant, rather than merely the affective component, where desires are gratified immediately.&nbsp;



For example, many people engage in strenuous physical exercise as a long-term goal of increasing their wellbeing, instead of munching tasty fast foods on their couches to achieve instant gratification.&nbsp;



"Behavioral nudges that help the planning self to reinforce long-term objectives are likely to be especially helpful in maintaining a healthy lifestyle,” explained lead study author Dr. Adelina Gschwandtner, a senior lecturer at the University of Kent’s <a href="https://www.kent.ac.uk/economics">School of Economics</a>. “If a better lifestyle not only makes us healthier but also happier, then it is a clear win-win situation.”



Humans’ unique ability to invest in long-term goals of maintaining good health and well-being by consuming fruits and vegetables and engaging in sports activities is now proven to be also a source of mental well-being and thus overall life satisfaction.&nbsp;



Although men are generally shown to be more willing to exercise and women more prone towards healthy eating, both genders appear to be particularly good long-term planners, able to delay instant gratification in order to achieve later and more prolonged states of well-being and life satisfaction.

A new study from the <a href="https://www.wisc.edu/">University of Wisconsin-Madison</a> reveals how aspen forests maintain the diversity they need to adapt to fluctuating environmental conditions. The experts found that aspen trees change their genetic structure over time as they balance the need to compete for sunlight and defend themselves from pests.&nbsp;



Since Aspen is the most broadly distributed tree species in North America, it serves as a "bellwether species," or a good indicator of how forests will adapt to anthropogenic climate change and other environmental challenges.



Trees are often faced with competition from other trees for sunlight, and they respond by making growth a priority. But with all of that energy committed to height growth, the trees become more vulnerable to pests.



The new research, which is funded by the <a href="https://www.nsf.gov/">National Science Foundation</a> (NSF), demonstrates that evolutionary forces can quickly shape entire forests. The study also shows that exposure to a range of environmental changes promotes the diversity that trees need to overcome various stressors.&nbsp;



"This long-term project provides new insights into the role of forest structure on genetic diversity in aspen groves, and how that affects leaf traits that influence the abundance and distribution of herbivores," said Colin Orians, a program director in NSF's Division of Environmental Biology. &nbsp;



According to a report from NSF, the findings are valuable for conservation biologists who want to protect diverse forest ecosystems from the threats of global warming, invasive species, and other environmental changes.



"What this work has done is show how key traits - like growth and defense - can be coupled together and how genetic diversity will allow populations to adapt to new stresses," said Rick Lindroth, an ecologist at University of Wisconsin–Madison.



The study is published in the journal <a href="https://www.pnas.org/">Proceedings of the National Academy of Sciences</a>.

Probiotics - beneficial microbes that balance gut bacteria and aid digestion - are typically fragile and can be destroyed by stomach acid or processing. 



Prebiotics act as food for these microbes, helping them thrive. Together, they form "synbiotics," a powerful health combination.



Researchers Smriti Gaur and Shubhi Singh from India's Jaypee Institute of Information Technology took an innovative approach, using natural prebiotics like corn and honey instead of complex processing methods. 



They created five chocolate varieties: a control and four synbiotic versions containing different combinations of prebiotics, probiotics (Lactobacillus strains), and flavor enhancers (cinnamon or orange).



Laboratory simulations of human digestion showed the probiotics remained viable for over five hours, suggesting they could survive long enough to benefit gut health.



Taste tests were positive, with researchers particularly enjoying the orange-flavored variety, describing it as having "vibrant citrus notes" complementing the "rich cocoa" with a "luxurious" texture.



This research represents just the beginning. With further refinement of strains, textures, and flavors, chocolate could evolve beyond mere indulgence to become a functional food that nourishes while it delights.



The study is published in the journal <a href="https://pubs.acs.org/doi/10.1021/acsfoodscitech.4c00741" target="_blank" rel="noreferrer noopener">ACS Food Science &amp; Technology</a>.

"The bay is primarily fed by the Nushagak River, which begins in the Alaska Range and flows southwest approximately 450 km. The bay is also fed by several additional rivers including the Wood, Igushik, Snake and Weary rivers," says ESA.



"The dark colors of the Nushagak River are most likely due to tannins or lignins (chemical substances found in plants). Tannins and lignins from roots, leaves, seeds, bark and soil can leach into the water and give it a brown or even black colour. The sediments then flow southwards where it is mixed with the bluer waters of the bay."

"The main antigenic targets of influenza virus are two surface glycoproteins, hemagglutinin (HA) and neuraminidase (NA). Whereas the structural and dynamical properties of both glycoproteins have been studied previously, the understanding of their plasticity in the whole-virion context is fragmented," wrote the researchers.



To investigate, the team conducted detailed simulations of the influenza A H1N1 virion, or the swine flu. The experts concluded that the visualizations show many new vulnerable states of flu viruses, which could improve future vaccines and antiviral drugs.

It is the fourth largest lake in the country. While Trasimeno’s water level varies, it has a maximum depth of approximately six meters.&nbsp;



"In this Copernicus Sentinel-2 image, captured on 6 August 2022, the lake’s emerald green colour is likely due to the presence of phytoplankton. Streaks in the water, particularly visible in the west, indicate the presence of soil and sediments which have been stirred up by winds. Dark colored waters in the southern part of the lake indicate a presence of submerged and floating macrophytes (aquatic plants) as well as algae," says ESA.



"Surrounded by hills on three sides, Trasimeno is subject to heavy storms created by winds, especially from the north and west. There are three islets in the lake: Maggiore, Minore and Polvese (the largest). The lake’s shores are sparsely inhabited with only two popular villages: Castiglione del Lago and Passignano sul Trasimeno."



"Italy is experiencing its worst drought in 70 years which has affected drinking water supplies, hydroelectric power and agricultural production. High temperatures, hot winds and lack of rainfall are the main causes of drought in the Umbrian region which saw Lake Trasimeno’s drop 1.3 m, reaching the limit of the hydrometric zero in July 2022."

The oxidized form of mercury can be harmful when it is ingested through contaminated water or food. This makes it necessary for experts to develop sensors that can quickly and accurately detect the presence of mercury.&nbsp;



Zong-Hong Lin and colleagues have now created a triboelectric nanosensor (TENS) that can detect mercury by simply by touching a sample. According to the researchers, their TENS could serve as the basis for similar devices to safely and remotely monitor other pollutants.

Salt is known to cover up undesirable flavors, such as bitterness in coffee or beer, but how exactly does sodium chloride change the taste of other compounds?



One previous study showed that, not only does salt suppress bitterness, but also enhances sweetness and sourness. Another study revealed that bitterness reduction by salt seems to be happening at the tongue receptor level as well as in the brain.&nbsp;



While it is known that salt taste is mediated by the presence of sodium channels in the form of taste buds, experts believe that there is also an unknown receptor responsible for how we taste salt that has not yet been identified.&nbsp;

Astronomers at <a href="https://www.jhu.edu/">Johns Hopkins University</a> have created an interactive map of the universe, including the actual position and real colors of 200,000 galaxies. The map allows the public to access data that was previously only available to scientists.



The map was developed using data collected by the Sloan Digital Sky Survey. For over two decades, a telescope in New Mexico was aimed at slightly different locations to capture the night sky.&nbsp;



"Growing up I was very inspired by astronomy pictures, stars, nebulae and galaxies, and now it's our time to create a new type of picture to inspire people," said map creator Brice Ménard, a professor at Johns Hopkins. "Astrophysicists around the world have been analyzing this data for years, leading to thousands of scientific papers and discoveries. But nobody took the time to create a map that is beautiful, scientifically accurate, and accessible to people who are not scientists. Our goal here is to show everybody what the universe really looks like."



"In this map, we are just a speck at the very bottom, just one pixel. And when I say we, I mean our galaxy, the Milky Way which has billions of stars and planets. We are used to seeing astronomical pictures showing one galaxy here, one galaxy there or perhaps a group of galaxies. But what this map shows is a very, very different scale."



"From this speck at the bottom, we are able to map out galaxies across the entire universe, and that says something about the power of science."

According to ESA, Lesotho is the only nation in the world that lies completely above 1,000 m in elevation. The country is famous for its tall mountains and narrow valleys, and is known as Africa's "Kingdom in the Sky."



Out of a population of around two million people, about 80 percent live in rural areas. More than 75 percent of these people are engaged in <a href="https://www.earth.com/news/climate-change-will-have-a-global-impact-on-agriculture/">agriculture</a>, including rainfed cereal production and animal grazing.&nbsp;



ESA reports that the country’s agricultural system faces a growing number of issues, with climate-related vulnerabilities such as drought, floods and extreme temperatures occurring more frequently. 



Diamonds are amongst the minerals found in the mountains. Indeed, Lesotho can truly be called the Kingdom in the Sky. Beautiful, culturally rich, safe, affordable, and easily accessible from Durban and Johannesburg, mountainous Lesotho is a vastly underrated travel destination. the Kingdom of Lesotho (Sotho: 'Muso oa Lesotho) is an enclaved country in southern Africa. It is just over 30,000 km2 (11,583 sq mi) in size and has a population of around 2 million.

Today's Video of the Day from the <a href="https://www.esa.int/">European Space Agency</a> features Dublin, the capital and largest city of Ireland. Beyond its pub culture, Dublin is known as a modern culinary destination and a UNESCO City of Literature.



"Dublin is located near the midpoint of Ireland’s east coast in the province of Leinster. The city, which covers an area of around 115 square kilometers, is bordered by the Dublin Mountains, a low mountain range to the south, and is surrounded by flat farmland to the north and west," says ESA.



"The city straddles the River Liffey, which rises in the Wicklow Mountains and flows around 80 kilometers eastwards through the city of Dublin, in which it is canalised and bordered with quays. It then empties into Dublin Bay, an arm of the Irish Sea."



Dublin has an abundance of green spaces, including one of the largest enclosed public parks in any European capital city. Phoenix Park, which was originally formed as a royal hunting park in the 1660s, includes 707 hectares of green space.

Today's Video of the Day from the <a href="https://www.esa.int/">European Space Agency</a> features the province of Zaragoza in northeast Spain. The image was captured by the Copernicus Sentinel-2 mission.



"Together with the provinces of Huesca and Teruel, Zaragoza formed the old kingdom of Aragon. Its capital, also called Zaragoza (not visible in this image) is home to around half of Aragon’s population," says ESA.



"The Ebro River can be seen winding its way through the province from west to east in this image. Between its source in the Cantabrian Mountains in the northwest and its delta on the Mediterranean coast, the Ebro River is fed by more than 200 tributaries as it flows 910 km across much of northern Spain."



Since rainfall is very scarce in this region, irrigation in the Ebro basin is critically important. In the valleys surrounding the Ebro River, many fields are used for growing crops such as corn, wheat, and barley.

Today’s Video of the Day from <a href="https://earthobservatory.nasa.gov/">NASA Earth Observatory</a> reveals the evolution of the Columbia Glacier in southeastern Alaska. Columbia is among the fastest shrinking glaciers in the world, and the video documents its rapid retreat over the years.&nbsp;



Columbia Glacier is a large, multi-branched calving glacier that flows out of the Chugach Mountains to the Prince William Sound.&nbsp;



According to USGS, Columbia had a long history of stability prior to 1980, with a length 41 miles, and small, short-lived advances or retreats.



In the years since 1980, however, satellite images have captured Columbia’s alarming retreat. By using false-color images, scientists can distinguish between snow and ice, open water, vegetation, and rocky debris on the glacier’s surface.



The series of false-color images featured in today's video were acquired over the span of 35 years. You can see that by 2021, the glacier’s main branch had retreated about 15 miles from its initial position.



The Columbia Glacier has also lost more than 50 percent of its volume, mostly due to calving. <a href="https://www.earth.com/video/nasa-reveals-3d-visual-of-an-atmospheric-river/">NASA</a> reports that while climate change likely started the retreat, mechanical processes kept the disintegration going.



The NASA images are provided by Jesse Allen, Robert Simmon, Joshua Stevens, and Lauren Dauphin using data from Landsat satellites, from the U.S. Geological Survey, and data from MODIS on NASA’s Terra satellite. The structure of Columbia’s moraine played a large role in the stability of the glacier before 1980. 



Like other tidewater glaciers, the Columbia built up a moraine over time, and the mixture of ice and rock functioned like a dam keeping out the sea. It was supported on one end by the shoreline and by the underwater terminal moraine at the other.

Today’s Video of the Day from the <a href="https://www.esa.int/">European Space Agency</a> features the Pyrenees Mountains, which form a natural boundary between France and Spain in southwest Europe.



The mountain range is 430 kilometers in length. It stretches from the Mediterranean Sea on the east to the Atlantic Ocean on the west.



At an elevation of 3404 meters, Pico de Aneto is the highest mountain peak in the Pyrenees, and the third-highest peak in Spain. Pico de Aneto is located in the Posets-Maladeta Natural Park, which spans more than 82,000 acres.&nbsp;



"Geological studies have revealed that the Pyrenees Mountains have been around for longer than the Alps, with their sediments first deposited in coastal basins during the Paleozoic and Mesozoic eras," reports ESA.



"The entire mountain range formed due to the upwelling of large sedimentary rocks by the collision of the Iberian and the Eurasian plate around 100 to 150 million years ago, followed by intense erosion from ice and water."



The western Pyrenees receive more precipitation due to moisture blowing in from the Atlantic Ocean. The mountain range contains many lakes, several small glaciers, and some of the highest waterfalls in Europe.

Today's Video of the Day from <a href="https://www.nasa.gov/goddard">NASA Goddard</a> describes two exoplanets that are orbiting a star 218 light-years away. A team of researchers led by the University of Montreal has found evidence that these planets are "water worlds."



The experts used data from NASA’s Hubble and Spitzer Space Telescopes. They discovered that exoplanets Kepler-138 c and Kepler-138 could be composed largely of water.



"We previously thought that planets that were a bit larger than Earth were big balls of metal and rock, like scaled-up versions of Earth, and that's why we called them super-Earths," explained study co-author Björn Benneke.&nbsp;



"However, we have now shown that these two planets, Kepler-138 c and d, are quite different in nature and that a big fraction of their entire volume is likely composed of water. It is the best evidence yet for water worlds, a type of planet that was theorized by astronomers to exist for a long time."

Today’s Video of the Day from the <a href="https://welcome.miami.edu/">University of Miami</a> Rosenstiel School of Marine and Atmospheric Science explores how changes in water temperatures have affected tiger shark habitats and movements in the North Atlantic Ocean. The study reveals that rising temperatures have caused the sharks to shift toward the poles over the past 40 years.



“Tiger shark annual migrations have expanded poleward, paralleling rising water temperatures,” explained study lead author Neil Hammerschlag. “These results have consequences for tiger shark conservation, since shifts in their movements outside of marine protected areas may leave them more vulnerable to commercial fishing.”



The researchers analyzed nine years of tracking data from satellite-tagged tiger sharks, combined with four decades of conventional tag and recapture data provided by National Oceanic and Atmospheric Administration (NOAA) Cooperative Shark Tagging Program.



The experts found that during the last decade of record heat, for every one-degree Celsius increase in water temperatures, tiger sharks migrated further poleward by over 400 kilometers. They also migrated two weeks earlier than usual to waters off the northeastern coast of the United States.



“Given their role as apex predators, these changes to tiger shark movements may alter predator-prey interactions, leading to ecological imbalances, and more frequent encounters with humans,” concluded Professor Hammerschlag.

Tiger sharks are shifting poleward as temperatures rise

Today’s Video of the Day from the <a href="https://www.esa.int/">European Space Agency</a> is focused on the melt ponds that emerge during the spring and summer on the Greenland Ice Sheet, which is the largest ice mass in the northern hemisphere.



"Melt ponds are vast pools of open water that form on both sea ice and ice sheets and are visible as turquoise-blue pools of water in this Copernicus Sentinel-2 image," says ESA.



"When snow and ice melts atop glaciers, water flows in channels and streams and collects in depressions on the surface. These melt ponds can speed up the melting of the surrounding ice since they greatly reduce the ice’s ability to reflect sunlight."



"This can create a positive feedback where an increasing number of melt ponds absorb more heat which causes ice cover to melt even faster."



According to ESA, Greenland has been hit with a late-season heatwave that began in early September. This caused the type of melt event that usually occurs in the middle of summer.



"In a recent paper published in Nature Climate Change, scientists found that major sea-level rise from the melting of the Greenland ice cap is now ‘inevitable’ even if the burning of fossil fuels were to halt overnight," says ESA. "Using satellite observations of Greenland ice loss and ice cap from 2000 to 2019, the team found the losses will lead to a minimum rise of 27 cm regardless of climate change."

Today’s Video of the Day from the <a href="https://www.esa.int/">European Space Agency</a> describes a new map of Mars that is providing insight into the planet’s watery past. The map also reveals where future missions could safely land on Mars.&nbsp;



The map has been created over the last decade using observations of water-rich rocks and mineral deposits. The images were captured by ESA’s Mars Express and NASA’s Mars Reconnaissance Orbiter.



"A big surprise is the prevalence of these minerals, with the map revealing hundreds of thousands of water-affected locations in the oldest parts of the planet," says ESA. "The new data will help answer exciting questions about Mars’ climate history, whether water was globally persistent or confined to short, intense episodes, and whether the conditions were ever suitable for life."



"Specifically, the map shows the locations and abundances of aqueous minerals. These are from rocks that have been chemically altered by the action of water in the past, and have typically been transformed into clays and salts."



According to John Carter of the Institut d’Astrophysique Spatiale (IAS), our collective understanding of Mars has been oversimplified. He explained that planetary scientists have tended to think that only a few types of clay minerals on Mars were created during its wet period, then as the water gradually dried up, salts were produced across the planet.



The new map shows that the composition of Mars is much more complicated than what we thought. For example, while many salts formed after Martian clays, there are some salts that are presumed to be older than some of the clays.&nbsp;



“The evolution from lots of water to no water is not as clear cut as we thought, the water didn’t just stop overnight. We see a huge diversity of geological contexts, so that no one process or simple timeline can explain the evolution of the mineralogy of Mars. That’s the first result of our study. The second is that if you exclude life processes on Earth, Mars exhibits a diversity of mineralogy in geological settings just as Earth does,” said Carter.

The experts found that the muscle metabolism of cavefish has been genetically reprogrammed over time. As a result, the animals have experienced major changes in their morphology and behavior. Despite these changes, however, the cavefish remain healthy and fit.



The research may provide new clues about the evolutionary consequences of prolonged physical inactivity in humans.&nbsp;



“It’s no surprise that people are moving less and less as technology has advanced,” said Rohner. “With cavefish, we have a unique system where we can study what might happen if people remained couch potatoes over very, very long periods of time.”
